Vanilla-Chocolate Marble Loaf Cake

Ingredients:

For the Cake:

  • 220g All-Purpose Flour
  • 1.5 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1/4 tsp Salt
  • 100g Light Brown Sugar
  • 100g Granulated Sugar
  • 55g Canola Oil
  • 40g Melted Butter (suitable for Vegans or Dairy-based)
  • 250g Milk (Soy, Oat, or Dairy)
  • 15g Lemon Juice or White Vinegar
  • 2 tsp Vanilla Bean Paste or Extract

For the Cocoa Paste:

  • 25g Dark Cocoa Powder
  • 5g Instant Coffee
  • 60g Hot Water

Method for Cake:

  1. Combine the milk with lemon juice or vinegar and set aside for 15 minutes to curdle. Stir in both sugars until dissolved, then add oil and vanilla, mixing well.
  2. Sift the dry ingredients together in a separate bowl, setting aside the cocoa paste ingredients.
  3. Fold the dry ingredients into the liquid mixture to create a smooth batter.
  4. Prepare the cocoa paste by blending the cocoa powder, instant coffee, and hot water until smooth.
  5. Incorporate the cocoa paste into one-third of the vanilla batter until evenly mixed.
  6. Spray an 8-inch loaf pan with non-stick coating. Alternate spoonfuls of vanilla and chocolate batter into the pan, layering until it’s 3/4 full.
  7. Bake in a preheated oven at 330°F (165°C) for about 25-30 minutes. Once baked, cool the cake on a wire rack before glazing.

For the Chocolate Glaze:

  • 200g Dark Chocolate (55% or semi-sweet)
  • 35g Neutral Oil

Glaze Method:

  1. Melt the chocolate and oil together in the microwave in 30-second intervals, stirring until completely smooth.
  2. Allow the mixture to cool to room temperature. Once the cake has cooled, pour the glaze over the loaf.
  3. Let the glaze set for about 1 hour at room temperature or chill in the fridge, then slice and serve.
