Berry Cream Buns 

Throughout Scandinavia, every nation boasts its unique rendition of delectable cream-stuffed buns, traditionally savored during the Fastelavn (Shrovetide) celebration. The Norwegian twist, which I was raised on, encompasses a sugary cardamom bun lavishly packed with jam and whipped cream. Here’s my personal take on it 🫶:

For 15 petite buns

Dough Components:

  • 370 g artisan bread flour
  • 55 g standard white sugar
  • 6 g quick-acting dry yeast
  • 6 g table salt
  • Between 185-200 g fresh milk at ambient temperature (initiate with the lesser quantity, supplement if essential)
  • 1 full-sized egg
  • ½ tsp cardamom powder
  • 65 g butter, diced and brought to room warmth

Strawberry-Blood Orange Conserve:

  • 400 g preserved strawberries
  • 200 g crystalline sugar
  • Juice and zest of ½ blood orange

Vanilla-Infused Whipped Cream:

  • 750 g heavy cream
  • 80 g icing sugar
  • Essence extracted from a vanilla pod or 1 tsp of vanilla concentrate


Dough Crafting:

  1. In the basin of a mixer with a kneading attachment, amalgamate all ingredients except the butter.
  2. Commence kneading for about a ten-minute span at a moderate pace.
  3. Introduce the diced, room-temperature butter gradually. Once fully incorporated, persist in kneading for another 10-20 minutes until the dough reaches the desired elasticity, evident from the windowpane test.
  4. Allow the dough to rise in a 78F/26C setting for approximately 90 minutes, or until its volume doubles.

Forming & Baking:

  1. Post doubling, partition the dough into 15 segments and mold into spherical shapes.
  2. Set them on parchment-lined trays, envelop, and let them rise once again in a 78F/26C ambiance for roughly 45 minutes.
  3. Prior to baking, glaze them with an egg wash. Bake in a preheated oven at 350F/180C for nearly 12 minutes. Let them cool to ambient temperature.

Conserve Crafting:

  1. Gently warm all ingredients, ensuring consistent stirring.
  2. Allow it to simmer for a duration of 20-30 minutes till it reaches a dense consistency.
  3. Relocate to the chiller until assembly time.

Cream Creation:

  1. In a mixer bowl armed with a whisk, pool all the ingredients.
  2. Whisk them until you achieve a soft-medium crest. Be cautious not to whisk excessively.
