Hearty Lasagna Soup

Ingredients:

2 tbsp olive oil
1/2 pound ground beef
1/2 pound ground Italian sausage
1 cup diced yellow onion
3 garlic cloves, minced
2 tbsp tomato paste
1 jar marinara sauce (your favorite brand)
4 cups chicken or beef broth
6-7 lasagna noodles, broken into pieces
A handful of fresh baby spinach
Fresh chopped flat-leaf parsley
Seasonings: salt, pepper, 1/2 tsp fennel seeds, 1/2 tsp Italian seasoning, a pinch of red chili flakes, and garlic seasoning
Optional Ricotta Mixture: 1/2 cup ricotta cheese, 1/4 cup grated Parmesan cheese, 1 egg, chopped parsley, a dash of nutmeg, salt, and pepper to taste
Mozzarella and Parmesan cheese for topping
Fresh basil leaves for garnish
Method:

In a large pot or deep pan, heat olive oil over medium heat and brown the ground beef and Italian sausage. Drain any excess oil if necessary.
Push the meat to the side, add a bit more olive oil, and sauté the onion until translucent. Add the minced garlic and cook until fragrant.
Stir in the tomato paste, then pour in the marinara sauce and broth. Bring the mixture to a boil.
Add the broken lasagna noodles to the pot, along with the spinach and parsley. Stir and cook until the noodles are al dente.
If using the optional ricotta mixture, combine ricotta, Parmesan, egg, parsley, nutmeg, salt, and pepper in a bowl. Drop spoonfuls of this mixture into the soup, cover, and cook for an additional 5 minutes. Alternatively, a drizzle of heavy cream can be used instead.
To Serve:

Ladle the hot soup into bowls, top with shredded mozzarella, more Parmesan, and torn fresh basil leaves.
