Ingredients:

  • 3 very ripe medium bananas, mashed (1 1/3 cup)
  • 1/2 cup of oat milk (gluten-free)
  • 1/3-1/2 cup of pure maple syrup, to taste
  • 1/4 cup of creamy 100% peanut butter
  • 1 tbsp of pure vanilla extract
  • 1 tsp of apple cider vinegar
  • 2-3 tsp of cinnamon
  • 1/2 tsp of allspice or nutmeg
  • 1/2 tsp of pink salt
  • 2 cups of fine oat flour (gluten-free)
  • 1 tsp of baking powder
  • 1 tsp of baking soda

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large mixing bowl, whisk together mashed bananas, oat milk, maple syrup, peanut butter, vanilla extract, and apple cider vinegar.
  3. Add cinnamon, nutmeg or allspice, and salt to the mixture, stirring well.
  4. Gradually fold in the oat flour, baking powder, and baking soda until the batter is smooth and well combined.
  5. Use a 1/4 cup measure to scoop the batter into the lined muffin tin.
  6. Bake in the preheated oven for 16-19 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Allow the muffins to cool completely in the tin before enjoying.
