Mango Lassi Cheesecake: A Tropical Fusion of Flavors

Ingredients:

  • For the Crust:
    • 260g digestive biscuits or sweet crackers
    • 90g melted butter
    • 2 tbsp sugar
  • For the Cheesecake Filling:
    • 600g cream cheese
    • 140g crème fraîche
    • 200g sugar
    • 4 eggs
    • 250g mango purée (blend and simmer mango)
    • 1 tsp cinnamon
    • 1/2 tsp cardamom
    • 5-6 saffron leaves with 1 tbsp hot water
  • For the Mango Compote:
    • 2 ripe mangos
    • 50ml water
  • For the Cream Cheese Topping:
    • 250g mascarpone
    • 250ml whipping cream
    • 75g icing sugar

Instructions:

  1. Prepare the Crust:
    • Preheat the oven to 160°C (320°F). Mix digestive biscuits, melted butter, and sugar. Press into a 22 cm springform pan. Bake for 8 minutes.
  2. Make Cheesecake Filling:
    • Whisk cream cheese and crème fraîche until smooth. Add sugar, then eggs, blending until homogeneous. Stir in mango purée, cinnamon, cardamom, and saffron.
    • Pour the filling over the crust in the springform pan.
  3. Bake:
    • Place a water bath underneath the oven rack and bake the cheesecake for 45-60 minutes at 160°C. The center should be slightly jiggly. Cool in the oven for 10-20 minutes, then let it reach room temperature.
  4. Prepare Mango Compote:
    • Cube mangos. Boil half with water, simmer, then blend to a purée. Cool and add remaining mango cubes.
  5. Make Cream Cheese Topping:
    • Whisk mascarpone and icing sugar until smooth. Add whipping cream, whisking until thickened.
  6. Assemble and Chill:
    • Spread cream cheese topping on the cooled cheesecake. Top with mango compote.
    • Chill overnight or for 5-6 hours before serving.
