Spicy Buffalo Chicken Lettuce Wraps

Ingredients:

  • 2 tbsp extra virgin olive oil
  • 1 lb ground chicken
  • 1 stalk of celery, finely chopped
  • 1/2 cup carrots, shredded or chopped
  • 1/4 red onion, finely chopped
  • 1/2 cup buffalo sauce, select your preferred brand
  • A small bunch of cilantro, chopped
  • Seasonings: Salt, pepper, garlic powder, Tony Chachere’s seasoning
  • Toppings: Diced tomatoes, non-fat Greek yogurt, shredded cheese or crumbled blue cheese, chopped scallions

Preparation Method:

  1. Warm the olive oil in a skillet over medium heat. Begin by sautéing the celery, carrots, and onion, seasoning them with salt and pepper as they cook.
  2. Once the vegetables are soft, add the ground chicken to the pan along with garlic powder and Tony Chachere’s seasoning. Cook the chicken thoroughly.
  3. After the chicken is cooked, stir in the buffalo sauce and cilantro, combining them well with the meat.
  4. Allow the mixture to cool slightly for easier handling.
  5. Prepare your lettuce cups, spoon the buffalo chicken into each cup, then top with a spoonful of Greek yogurt, fresh tomato, a sprinkle of cheese, and scallions.
