Ingredients
For the Apple Pie Filling:
- Chopped apples: 180g
- Caster sugar: 40g
- Ground cinnamon: 1 & 1/2 tsp
- Cornflour/cornstarch: 1 tbsp
- Lemon juice: 1 tbsp
For the Cookie:
- Dairy-free butter (cubed): 115g
- Caster sugar: 140g
- Vanilla extract: 1 tsp
- Dairy-free milk: 30ml
- Plain flour: 210g
- Ground cinnamon: 1 tsp
- Baking powder: 3/4 tsp
- Bicarbonate of soda: 1/4 tsp
- Natures Charm Coconut Caramel Sauce: 3 tbsp
For the Cinnamon Sugar:
- Caster sugar: 2 tbsp
- Ground cinnamon: 1 tsp
For the Cream Cheese Frosting:
- Dairy-free butter: 30g
- Dairy-free cream cheese: 20g
- Natures Charm Oat Whipping Cream: 3 tbsp
- Icing sugar: 250g
- Vanilla bean pod (seeds only): 1

Instructions
Apple Pie Filling:
- Prepare the apples and weigh out 180g. Separate 60g to be incorporated into the cookie dough later.
- In a saucepan, cook the 120g of apples with sugar, cinnamon, cornflour, and lemon juice. Stir for about 5 minutes or until the apples soften and the mixture thickens.
- Allow to cool to room temperature.
Cookies:
- Preheat your oven to 180°C (fan). Line 2 baking trays.
- Cream together the butter and sugar. Add vanilla and milk, then mix.
- Sift in the dry ingredients and mix until just combined.
- Fold in the 60g of reserved chopped apples.
- Form the dough into 6 balls and place them on the trays.
- Pipe some caramel into the center of each dough ball, sprinkle with cinnamon sugar, and leave them in ball shape for baking.
- Bake for 12-15 minutes or until slightly golden. After baking, reshape using a cookie cutter.
- Cool on the tray.
Cream Cheese Frosting:
- Whip together butter, cream cheese, and whipping cream.
- Add icing sugar and vanilla, and whip until smooth.
- Fill a piping bag fitted with a round nozzle.
Assembly:
- Once cookies are cooled, pipe a half swirl of frosting on each.
- Fill the middle of the swirl with caramel sauce.
- Top with apple pie filling.
- Dust with icing sugar and refrigerate until set.
